Miguel Ruiseñor, CP Kelco’s LATAM regional sales director, told us, “There is not one single Latin America. You cannot talk about the same trends everywhere. The vast majority are more or less related but you have to talk about different mouthfeels and flavors and different interests sometimes.
“In general, the foundations are the same but you have make some particularities, which is why we have different prototypes to achieve the goals of every single market.”
“What we are showing to the market in Latin America at this time is very different and very new and attractive,” added Ruiseñor.
Alyne Yamabe, the company’s technical services manager, Latin America – Food, then walked us through some of the prototypes developed that fit with the various trends of protein, sugar reduction, vitamin and mineral fortification, and clean label.
Among the prototypes were a nutraceutical shot fortified with protein, fiber and minerals; a creamy vegan yogurt made with coconut milk; a vegan gummy (a non-starch, non-gelatin confection); and a macha-almond milk combination.
